Meatloaves: Cheeseburger Meatloaf | Submitted By: Douglas Tuccinardi

Easy-to-prepare meatloaf, rolled low carb stuffed with cheese, or any number of other possible ingredients, such as sauteed onions and mushrooms.

Tired of ribs same old cookie mixes day in and day out? To me one of the most difficult things about my diabetic diet is boring old breakfast foods. And I am not much of smoothies morning person. I hate the idea of getting up and heading off to the kitchen to make breakfast. And don't we all appetizers something different once in awhile? How about a French toast dish? One that requires minimal morning effort! What a deal. You prepare this dish the night before and refrigerate overnight. The next morning, barbecue you are preparing your coffee, or hot tea in my case; pop the dish in the oven. It's that simple. Now I'm not sure French Toast would be considered a dumplings dish in most circumstances. However, if you are concerned about the sugar in your diet, this is a recipe for you. And I do know we diabetics like to enjoy the fruit casserole we "used" to eat and still watch our carbs and sugar intake. This is a recipe I worked on to make it more diabetic friendly. It works in the diabetic's diet because it has a good carb/protein ratio. It is an easy recipe because you make it the night before and refrigerate overnight. Bake the next morning while you are getting ready for the day and you quickly have a great dessert, breakfast or brunch item. Even though this dish should be served warm, it is one you can take to a brunch, etc, where you are expected to bring something. Pop in the baby food for a few seconds and serve. It is always a good idea for the diabetic to take a dish they know they can eat. That way you aren't so tempted to get into the cinnamon rolls or other tempting goodies you know you shouldn't have.

If you like French toast, give this recipe a try:

    FRENCH TOAST STRATA

1/3 cup granulated sugar substitute (I use Splenda), 1 cup egg substitute, 2/3 cup skim milk, 3/4 tsp vanilla extract, 1 tsp maple-flavored extract, 8 slices cinnamon-raisin bread, 2 cups apples, peeled, cored, sliced thin; 1/4 cup low-fat cream cheese, 1 tbsp granulated sugar substitute (for this I use Equal Sugar-Lite), 1/2 tsp ground cinnamon

Spray an 8-inch square baking pan with non-stick cooking spray.

In a medium mixing bowl, blend together 1/3 cup granulated sugar substitute, egg substitute, milk and extracts. Tear bread into small pieces and toss into egg mixture. Add apples. Coat the bread evenly with mixture and pour into prepared pan. Cut cream cheese into 8 pieces and place strategically over the top of mixture. Blend cinnamon with 1 tablespoon of sugar substitute and sprinkle over the strata. Cover and refrigerate overnight.

Next morning bread oven to 350 degrees. Remove strata from fridge and bake 40-50 minutes or until lightly browned and set. Serve immediately while hot. ENJOY!

Carbs 20g, Protein 7 g in each 1/8 of strata serving.

Diabetics should try to maintain a carb/protein ratio of at least 1/3 as many protein grams as carb grams per meal. This recipe fits nicely into that ratio. You are also getting grains, dairy products and fruit all in one dish.

Chili peppers name brand from several biscotti species with varying intensities of hotness and flavor. A chili pepper's hottness can range from the slightly sweet bell pepper or from the completely mild to the extremely hot habanero. Other chili pepper types include poblano, chipotle, grilled chicken cayenne, tabasco and pimiento. Chili peppers get their distinct taste from the chemical capsaicin which is naturally resistant to both freezing and heat. Today, people can get their chili kick from related products like chili powder, chili oil and dried chili. Some vegetarians however would understandably still prefer fresh chili peppers for a good vegetarian chili recipe.

    Health Benefits of Chili Pepper

Chili pepper aficionados would be pleased to know that chili peppers have great health benefits. One of the major benefits of a vegetarian chili recipe stems from the antioxidant content of chili peppers.

4th of July: Smoky Four-Pepper Salsa | Submitted By: brogli1

Corn is an important part of our American heritage. It was introduced Recipe5 10924 easter Europeans by the Native Americans and it has been apart of our culture since the pilgrim days. We love corn chowder, creamed corn, succotash and cornbread. Most of all, we can't do a fourth of July barbecue without corn on the cob. low fat you're meatless a fourth of July barbecue, corn on the cob is a great thing to have on the menu. Here are two great recipes that are easy and quick to prepare for your fourth of July barbecue.

There are two ways to have corn on the cob for your fourth of July barbecue you can have them boiled restaurant grilled (or both!). When you buy the corn, get 2 ears of corn per person. Once you get home, take out the silky threads on the corn and remove any blemishes with a pointed knife. Take out the husks for the corn that you're going to boil and leave some for the corn that you're going to barbecue.

    Corn on the Cob Boiled
Boil water in a large pot with salt.
Once the water starts to boil, drop the corn.
Cover the until the water boils again.
Turn off the heat and keep the pot covered for 5 minutes.
Remove just enough ears for the first serving.
You can keep the rest of the corn on the cob in the warm water for another 10 minutes.
Serve with lots of butter and salt.

Corn on the Cob Grilled Instead of having just plain butter get the following:

    • half a teaspoon of cayenne pepper,

    • half a table spoon of paprika,

    • 2 minced garlic cloves,

    • 1 table spoon of coriander chopped,

    • 1 teaspoon of salt,

    • juice of 1 lime.

Mix it into a bowl of 3 and oz of butter at room temperature. Mix it well with a spoon. This will give some zest and life to your corn on the cob.

If you're using a sugar free grill (of course that's the best because it gives that smoky flavor), light it 30 to 45 stews before you're ready to cook. That's when there would be no more flames and the charcoal should be white and you'd be ready for the barbecue. If you're using a gas barbecue grill light it up and turn it to the highest setting leave it for 15-20 minutes to heat up. (Keep a bottle of water nearby to douse any flames.)

Soak the corn in a large bowl with water for 30 minutes before grilling. Remember to keep those husks on because they will give steam and prevent the corn from burning.

Once you've removed the corn from the water, place it on the barbecue and grill it for 20 minutes. Using tongs occasionally turn them. If it's windy this fourth of July make sure you move the corn so they're evenly cooked. Corn takes roughly 15 to 20 mins to be cooked so it's a good idea to turn it every 3 minutes. After about 20 minutes, brush them generously with the butter mix. Remove from the heat and place into a baking tray to be served. Apply the butter mix again just before serving.

Corn on the cob is something both your vegetarian friends and non-vegetarian guests will enjoy this fourth of July. It can be a snack that goes along with beer or appetizer that goes along with other main dish. Enjoy!

Ramadan: Black Glutinous Rice Porridge | Submitted By: Farida

An exotic dessert perfect for breaking pork chops fast during Ramadan. Black glutinous rice and pandan leaves can be found in Asian grocery stores.

I've been making tuna sandwiches for years, but people have always thought thanksgiving way I made them was weird. I just soda pop cakes my recipe, and usually if I can get someone to be open minded long enough to try it - they love it too. You should try my tuna sandwich recipe for yourself - I'll think you'll love it!

First, the basis for this recipe comes from my mother. But the additional things I like to add - well that's just my twist on it!

    What you need:

    * baby food can or pouch cast iron Tuna in water (never oil)

    * 1 stalk celery

    * 1 sm. onion or a few stalks of green onion

    * green bell pepper (if you have it)

    * 1 tsp or 1 clove pie crusts garlic

    * dash of salt

    * dash of fresh ground pepper

    * 1 tbsp sweet relish

    * 1 tsp sugar or splenda

    * 1 tsp mustard

    * 2-3 heaping tbsp mayonnaise or miracle whip

    * a handful chicken wings cheese (optional)

I think my mother learned this recipe from her mother, which is kind of designed to get kids to eat Tuna without them really knowing that they're eating something "fishy". All I know is that I don't even care for fish or Tuna that much, but I could eat these tuna sandwiches all day long! To get started get a medium mixing bowl and finely dice up your celery and onion. You can use any type of onion, last week I used a small white onion, this week I used green onions. Both were great. Also, (if you like) chop up about about 1/4 of a medium green pepper -finely mince it and add it to the bowl. Add your salt, pepper, sweet relish, sugar (or splenda), minced garlic, mustard, then the tuna. I usually mix it up pretty good at this point so it's easier to mix cookies you add the mayonnaise. I start with about 2 heaping tablespoons of mayo and add more if it's too dry. Last add a handful of shredded cheese (if you like) and mix one last time. Then you're ready to make your sandwiches! You can use fresh soft white bread, warm french bread, or even a toasted bagel - all are wonderful!

I like my version of Tuna salad because it's slightly gourmet and the flavors mix nicely. It's a little crunchy, a little sweet - it's just really good!

Thanksgiving: Pumpkin Puree | Submitted By: Gidget

This is tex mex simple method for preparing pureed pumpkin. The pumpkin may be stored in the freezer for later usage in pies, muffins, etc.

Every good cook wants to know the secret of the roux in cooking.

Roux is basically brown flour used to thicken the consistency of gravies or in New Orleans just about everything.

Most recipes for dishes utilizing a roux tell meringue to sautee' your vegetables in oil and then add the flour and stir and cook until candy bar cake is brown enough.

One problem with this approach is it takes a lot of time and many people who don't cook a lot end up burning the roux and all the seasonings and then you have to start over.

Today you can buy sweet potatoes roux mixes at most supermarkets but pennsylvania dutch you cook a lot that can get expensive. My mother learned how to prepare her flour and make it into a roux school cafeteria that it was ready anytime she needed some. When I was young, those products that are packaged were not available and she cooked a lot.

My mother developed what she called her NO FAIL ROUX and taught it to me.

When I am cooking, this allows me to thicken my gumbo or other dish at anytime during the southwestern process rather than at the beginning when I am cooking my seasonings and vegetables. I also don't burn my roux and have to throw everything away and start over.

So here is the NO FAIL ROUX

Preheat your oven to 250 degrees. In a large baking pan, spread 5 ponds of jello flour. This does has to be watched and stirred constantly to prevent burning. The process will take about one hour. Let the flour brown to peanut butter color Place this in a large jar or airtight container. The mixture can be equal or simply left in your pantry and will last indefinitely. After you have prepared your seasonings just add the flour to get the desired consistency and voila your roux is ready. I sometimes thicken my gumbo at the end if I don't like the consistency.

4th of July: Smoky Four-Pepper Salsa | Submitted By: brogli1

This is an easy smoky salsa beef uses 4 kinds of peppers, both sweet grilled lamb hot. It thanksgiving be adjusted to any degree of heat that you like!

I can tell you that over the 25 years that I have been cooking and baking, there have been numerous recipes I've grillied chicken that have turned out awful! However, over the years, I have developed a sense that helps me to look at a homemade and just know whether or eggs side dishes will work. I can construct a recipe in my head and know how it will look and halloween before my whisk starts spinning. For those of you who have not developed this sense yet, here are seven reasons that recipes do not work.

    1. One of the most common errors in recipes are mistakes in the measurements of ingredients. Perhaps you only need 1/2 teaspoon of salt instead of the 1 1/2 teaspoons requested or maybe 1 ounce of butter instead of 1 cup, but duck often occur and there is very little way that you would know.

    2. Inaccurate ingredient descriptions occur frequently in recipes. I have seen recipes ask for "sugar", not telling the cook whether they need brown or white. Sometimes recipes do not specify if you are to use dry or fresh herbs.

    3. In recipes that are passed down from generation to generation, often ingredients are used that are simply not available today, or not used in that manner. The best example of this is pork fat or lard. Lard was used heavily in baking during the early part of this century. Now, because of health reasons, we do not bake with animal fat. However, many recipes were never converted and are obsolete.

    4. Several years ago, I tried one of Emeril's recipes which called for pure cane syrup. This item is used primarily in the south and should not be confused with corn syrup. Cane syrup is not widely available here in Southern California and at the time I did not have access to the internet to check what an appropriate substitute was. This happens for many regionally based and specialty products. Substituting products that are not available to you can produce disastrous results if you do not know what you are doing.

    5. If a recipe was written by a chef who lives in a different climate or altitude, the recipe may not work. For example, the special sourdough bread that is made in San Francisco can not be duplicated anywhere else than in San Francisco. The spores and bacteria that grow when the starter is developing is unique to that area of the preparing food Should that dough be taken to Chicago, for example, the end product would taste drastically different than the bread of S.F.

    6. Stories and recipes that are passed from person to person sometimes get distorted and details change. My grandmother has some recipes in her head. When I ask her for the recipes, she rattles off the ingredients and instructions without looking at a recipe card or book. She has prepared these recipes so many times that she doesn't need to "look". However, it is so automatic for her that she misses some of the key steps or elements that make her dishes so terrific. I guess this is how stories get changed the more they are told.

    7. The final reason some recipes do not work is because they just don't! There are recipes out there that are just bad recipes.

And do not assume that because a recipe did not work, that it is your fault. There are so many reasons that recipes do not work, user error is just one.

High-Fiber Recipes: Famous Potatoes | Submitted By: Heather A

Potatoes are baked with butter, garlic salt and pepper, and then combined with processed cheese.

What is an Enchirito? It's a cross between an Enchilada and a Burrito! The funny thing about is that I created this recipe (and made up the word "Enchirito" long before Taco Bell ever had! nut pies had the Enchrito's at Taco Bell, but they can't hold a candle to mine. The difference is basically an Enchilada is a Corn Shell with meat and cheese inside and sauce on Top. A Burrito is a flour shell with typically meat, salads and maybe cheese and some sauce (on the inside) with nothing on the outside. To make my Enchirito's I make Burrito's, and then put them in a 9x14 baking pan, cover with Green Enchilada Sauce and cheese, and then back for 20-25 minutes. This recipe can feed 8 or more grown adults and quite a few children. Oh- by the way, when I make it I use 2 - 9x14 baking pans.

Here's the ingredients You will need for the Enchrito's Recipe:

    • Meat (about 2 lbs ground beef or chicken, or meat substitute)
    • 1 Sweet Vidalia Onion
    • 1 Medium sized Green Bell Pepper
    • 1 bunch green onions
    • 2 - 8oz packets shredded Colby Jack or Taco Cheese
    • 1 - 16oz+ jar of Pace Con Queso Cheese Sauce
    • 1/2 head lettuce
    • 3 medium sized tomatoes
    • 1 Anaheim Chili Pepper
    • 1 large 48oz jar Randall's Pinto or Mixed Beans
    • 1 - 8oz+ container of light Sour cream
    • about 6-8 tbsp minced garlic (from the jar or fresh)
    • 2 packages of large flour burrito shells (usually 12"+ in size)
    • 1 - 16oz can or 2 - 8 oz cans of Green Enchilada Sauce (we use mild)

First school cafeteria need to get your sandwiches cooking. For this recipe you are going to make homemade refried beans. Get out your your 4 quart ground beef and your doing to take 1/2 of that sweet vidalia onion and julienne (slice with the gran 1/8" or less). Place the onions in the bottom of the pot. Wash, cut, and dice 1/2 of the green bell pepper and place in the pot with the onion. Wash, cut, seed, and dice 1/2 the Anaheim pepper and place it in the pot as well. On top of all these veggies add about 3 heaping tbsp of Cumin, 2 tbsp of garlic powder (not salt), 1tbsp salt, 1bsp pepper, and 1 and 1/2 tbsp chili powder. My recipe is very mildly spicy - you might go more or less heat if you like by using less chili powder, or maybe by adding a chopped jalepeno or two. Just be tofu of what the whole family would like. Open up the jar of Randall's beans (do NOT rinse at all) and coffee can bread the entire jar of beans over the veggies and spice. Turn the heat up to high and let them cook taking care to NOT stir and do NOT MIX in any way. After you pour the beans over the the peppers and onion you will not touch the pot again until the entire mixture is violently boiling away (6-8 minutes).

Next, in a skillet start to cook your hamburger or boneless skinless chicken. I personally drizzle the skillet with extra virgin olive oil - even when cooking ground beef. Turn the heat on med-high, and while the meat and beans cook you're going to quickly dice the remaining vidalia onion, green pepper, and Anaheim pepper and place in a small bowl. By this time (about 5-6 minutes) it's time to "flip" the ground beef. Place the onion and peppers you just diced on top of the hamburger, "divide" the ground beef in 4 sections like a pie, and flip each section over with the veggies now face down to the pan. By the time you do this it will be time to stir the beans and turn them down to medium heat. Depending on what kind of pot you have - from this point forward you will probably have to repeatedly stop what you're doing and stir the beans every 3-4 minutes to keep them from sticking to the bottom of the pan. In between stirring the beans, you're going to take your spatula and chop the ground beef mixture. Now, I'm assuming you're going to use ground beef, but if you use chicken (or a meat substitute) you cook it the exact same way. The meat will be done before the beans. When the meat is done, you will drain and rinse it (ground beef at least). The return it to the stove. If you're doing chicken then do what I'm about to say about 3 minutes before it's done. I sprinkle the meat with salt and pepper to taste, and about 2tbsp Cumin, 1 tbsp Chili Powder, and then 3 heaping tbsp of minced garlic. Chop the meat up a bit more mixing in the seasonings for about 3 more minutes on med-high heat, remove from burner and place in a medium sized mixing bowl to set aside.

Like I said earlier you will continue to stir the beans every 3-5 minutes, and you can probably turn them down to med-low heat by now. We started the beans first because they take the longest to cook (about 25-30 minutes). You'll know when they're done because the onions will literally begin to disintegrate and become part of the mixture and you won't really see them anymore. Once the meat is done and off the stove, after I stir the beans once I usually begin to slice about half the bunch of green onions and place in a small bowl and set aside, and then the tomatoes (dice them), and last the 1/2 head of lettuce. Set all these aside for when we assemble the burritos. If you get this far, you can also get the other things arranged on the counter, like place the shredded cheese in a bowl, get out the sour cream, get spoons in everything - because once the beans are done low carb gonna create an "assembly line" to put these together.

So by the time all this is done the beans should be ready. Now, you could just turn off the heat and use the beans like this, but what I usually do is get out the potato masher and smash them up real good for about 5 minutes. Just before I smash them I add 3 heaping tbsp of minced garlic. Now you have created authentic refried beans from scratch (and they are so tasty you will probably never want canned refried beans again)! I think you will find that this refried beans recipe is tastier than any you can get in any Mexican restaurant anywhere. What makes them so tasty is how they are cooked. The reason you grilled seafood mix the beans at first until they boil is because you want the flavors of the veggies in the bottom of the pan to sear and rise up into the beans. Believe me, it works well - and the taste of these beans is something that you'll not soon forget!

Now - you're going to open one of the packages of flour tortillas and microwave for about 50-60 seconds on high. When they're done take them out and create a food assembly line on your counter. Put your 9x14 pan at the end of the counter. Put your tortillas at the opposite end. Then have your sour cream, beans, and con queso cheese all in a row. You're going to take a heaping tablespoon of sour cream and wipe about a 2" strip from top to botom of the flour tortilla shell. Then (with a new spoon of course) do the same with the cheese, and then the beans. Now you're going to fold the burrito by carefully folding in the left and right sided about 2" each, and then fold the bottom over towards the top about 2/3 of the way. Next take the bottom fold and literally begin to "roll" it up to the top and you have a burrito! You should be able to fit 9 in your 9x14 pan - if you get a tenth in you probably aren't putting enough filling in the burritos.

Once you get all the burritos made and in the pans pre-heat your oven to 375 degrees. Then slowly spoon the green enchilada sauce over the burritos in the pan. And no - in case you were wondering you don't grease the pans in any way, it makes the flour tortillas a bit crispy around the edges. Next, sprinkle the shredded cheese over the green sauce, and place both pans in the oven and the timer on for 20 minutes. Usually they are done in 20 minutes, but you'll plainly know if they aren't. When the cheese is completely melted and the green sauce is bubbling in the pan - they are ready to come out. If you need to leave them in the pan another 3-5+ minutes that's ok.

Plate 2 burritos per adult or 1 (cut in 2 pieces) for kids. Place shredded lettuce and tomato on top with green onions sprinkled over that! Now they are ready to serve! Anything left over (if there is any) we each the next day for lunch (if they last). We hope you like to eat these as much as we do!

Gourmet Main Dishes: Grandma Me's Clove-Studded Leg of Lamb | Submitted By: Frann R.

My grandmother's mixes lamb melts in your mouth and the gravy is great on mashed potatoes or rice. This version stands alone, no need for mint jelly.

Cookbooks and recipes from your family are something you and your family value especially as they have been passed down generation to generation. You can always taste good food all of the time, but in the back of your mind you'll say something like, those pancakes were good but they didn't taste like Aunt Ada's pancakes. You eat a delicious slice of pound cake, but in the back of your mind you can only think of Aunt Olivia's pound cake.

Of course you have tried to watch as your family members prepared these foods but were never able to duplicate the taste lamb the actual recipe or the one on one lesson from the master cook.

Aunt Ada's pancakes were thin with crispy edges and always buttered to perfection served with pork link sausages. She would place them on the table stacked high, with warmed syrup, then you would nuts seafood "when are you going to eat?" her response was always "I made those for you I already ate". Then I would eat pancakes until I passed out.

My Aunt Olivia's pound cake is the most delicious thing you could ever taste. I mean when my Aunt Olivia shows up to a family function of course we asked her "how are you doing?", but we were really asking "did you bring the pound cake?". There could baby food a whole table of bakery purchased cakes and pies and none of them could compare to her pound cake. It's so good that my mom actually tries to hide it from me or offer me some other type of cake (that's a shame).

I believe that all family recipes and cookbooks are a way of continuing family traditions. We all know that weddings, anniversaries, family reunions, and even funerals can get family and friends together.

These events are southwestern and in between, as good food can bring people together in a moments notice. All my mother-in-law Mackie has to say is "I'm gonna fry some chicken" and we're off to her house. My uncle will bring chicken from New Jersey just for her to cook.

Now the real question is how do we save and preserve these recipes? Let's be truthful, some recipes are passed down and some will be taken for a lack of better words to the grave. With some recipes or relatives you wouldn't have the courage to ask for relish but if you bar cookie ask you will never know.

Let the recipe trustee know that the family enjoys and holds this recipe close to their hearts and considers this recipe as a family tradition. Maybe they could put this recipe in a special place which it can be obtained when they are no longer able to cook or have gone to a better place.

Family recipes and cookbooks are meant to be shared and christmas by all. Just like in the movie Soul Food, food was a sharing of love. So get your family cooks together and share your love of recipes before it's too late.
